Remember that carrot cake of Claire? it was delicious huh? she’s back with some badass cookies today!
Fresh nectarine and White Chocolate Cookie’s receipe
Makes about 15 cookies.
Ingredients:
1 egg
100g all-purpose flour
1/2 teaspoon baking soda
1/2 vanilla extract
40g white chocolate chips
1 cup finely diced fresh nectarines,
75g butter, at room temperature
50g granulated sugar
50g oatmeal
ps : I added a handful of dried cranberries
Directions :
Combine butter and sugar
Combine remaining ingredients and add the pieces of nectarine last for not crushing them
Cover and chill for 20 minutes.
Preheat oven to 180*C.
Make small balls with a teaspoon on a sheet parchment.
Leave at least an inch and a half around each cookie to allow for some spreading. Bake cookies for 10 minutes.
Cookies should be golden at the edges but soft in the middle.
